And lately, I've gotten tired of searching for recipes on the internet, so it was back to my first love. This recipe came from my Southern Living year 2000 cookbook. It was a very flavorful recipe that made a big pot of yummy soup!<br />
<br />
3 garlic cloves, minced<br />
1 T. olive oil<br />
3 (15 oz.) cans cannellini beans, undrained<br />
32 oz. chicken broth<br />
1 (1.4 oz.) envelope of vegetable mix (I used the Knorr brand usually used for dips)<br />
20-25 1-inch frozen meatballs (I think if you can use a smaller size it would be better, but these still worked fantastically)<br />
1 (14.5 oz.) can of Italian style diced tomatoes<br />
1/2 tsp. dried crushed red pepper (I used a dash of cayenne pepper)<br />
8 oz. uncooked rotini pasta<br />
1 (6 oz.) package fresh baby spinach, torn<br />
<br />
Saute garlic in hot oil in large stockpot over medium-high heat. Stir in 2 cans of beans and the chicken broth. Bring to a boil.<br />
Stir in the envelope of vegetable mix until dissolved. Add meatballs, tomatoes, red pepper; return to a boil.<br />
Add rotini, and cook, stirring often, 15 minutes.<br />
Stir in remaining can of beans and spinach; cook 5 more minutes. Garnish with fresh parmesan cheese and chopped fresh parsley, if desired.<br />

1 (12 ounce) container of Cool-Whip, thawed<br />

Line the bottom of a 13x9 pan with 1 bag of cookies. Layer bananas on top.<br />
In a bowl, combine milk and pudding mix. Blend together using a mixer until smooth. In another bowl, combine the cream cheese and condensed milk until smooth. Fold the cool-whip into the cream cheese mixture. Add the cream cheese mixture to the pudding mixture and stir until well blended. Pour over the bananas and cover with remaining bag of cookies. Refrigerate until ready to serve.<br />

You don't have to tell me that. It's also not cheap. So I started buying stuff to make my own at home. Then I got the great idea to make them all at one time and freeze them. I may be slow, but I eventually get it. Just pop these babies in the oven for about 20 minutes (I usually put them in while I am showering) then grab and go!<br />

Here's what you need:<br />
12 english muffins (I bought 6 white and 6 wheat)<br />
6 turkey sausage patties, fulled cooked<br />
9 pieces of bacon (I bought the precooked kind)<br />
10-12 eggs (The kids are not big egg lovers, so I only used 10)<br />
1/4 c. milk<br />
1/2 tsp. salt<br />
1/2 tsp. pepper<br />
12 slices of cheese (whatever kind you prefer that melts well)<br />
butter<br />

First off, I split the english muffins and toasted them in the oven at 275 for about 15 minutes.<br />
Then I beat the eggs, milk, salt, and pepper together in a large bowl. Melt about 1 tbsp of butter in a large skillet over medium heat. I cooked the mixture in halves to make it easier. Let the eggs cook, scrambling slightly with a spatula until they begin to set. Divide the eggs into six sections and then flip, letting them cook completely. Remove from heat.<br />
Add a piece of sausage to one half of each english muffin (or 1 and 1/2 pieces of bacon). Place your cheese slice on the other half of the muffin. Then place the egg on top of the cheese and close each half up to make a sandwich. This made 6 sausage muffins and 6 bacon muffins.<br />
Once they are together, wrap individually in foil and freeze. I usually put two or three in the fridge overnight, then pop them in a 350 oven in the morning for about 15-20 minutes. Then we can grab them and go. Super easy!<br />

Note: I saw on Pinterest where someone baked their eggs in muffin tins. That might be an easy way to put the eggs together rather than scrambling them. It also would be the perfect size. Wow! I was wrong! These were so flavorful and an awesome spin on an ordinary chicken salad sandwich. It was super hot outside today and I did not want to turn on the oven, so these were a perfect alternative to cooking a big meal.<br />

2 large chicken breasts, cooked and shredded<br />
1 cup of Caesar salad dressing<br />
1/2 cup of shredded parmesan cheese<br />
1 Tbsp. parsley<br />
2 tsp. black pepper<br />
Lettuce, tomato, bread of your choice<br />

I ran my cooked chicken through the food processor, because I like my chicken cut up in really fine pieces. All together, it came out to about 3 cups of chicken. Next, stir in the cheese, parsley and pepper with the chicken. I actually used italian seasoning, because I'm all out of parsley. Lastly, add your salad dressing. You can add more or less, depending upon your taste preference. I mixed this all together while my chicken was still warm (I had boiled it). So I served it warm on toasted white bread with romaine lettuce and a yummy heirloom tomato. It's a great side dish for almost anything. I found this one several years ago on allrecipes.com and it's been my favorite one, by far, of all the recipes I've tried. I know 2 tsp. of black pepper sounds like a lot, but trust me. It really gives it a nice kick when serving. Be sure to prepare it a few hours ahead of time. That gives it plenty of time to chill and let all the ingredients meld together.<br />

8 slices of bacon, cooked and crumbled<br />
2 heads of broccoli, chopped<br />
1 1/2 cups of sharp shredded cheddar cheese<br />

2 tsp. black pepper<br />
1 tsp. salt<br />
2/3 cup mayonnaise<br />

In large bowl combine broccoli, onion, cheese and bacon. Prepare the dressing in a small bowl by combining the vinegar, sugar, salt, pepper, mayo and lemon juice. Combine dressing in the large bowl with the broccoli mixture. 1-12 oz. box of rice krispie cereal<br />
1-16 oz. bag of jet-puffed mini marshmallows<br />
1 stick of butter<br />
1 tsp. of vanilla<br />

Melt butter in large pot over low heat. It's important to do it slowly and not let the butter get browned. Stir in vanilla. Stir in marshmallows and continue cooking over low heat until the marshmallows are melted and the mixture has reached a smooth consistency. Stir in cereal. Pour into a buttered pan. You can use a 13 x 9 baking dish for thicker treats or use a rimmed cookie sheet for thinner treats. Using wet hands, so the mixture will not stick, press into the pan evenly. Let cool completely. Cut into desired size of bars. <br />

You could easily adjust this recipe to your liking. Add some onions and green peppers. Add more cheese. It really is a stellar recipe, or I wouldn't put it on here. I think it would be a great brunch with a nice fruit salad on the side. 1 Roll of Crescent Rolls<br />
1 pound of sausage (regular or spicy)<br />
5 eggs<br />
Salt and Pepper, to taste<br />
1 cup of shredded cheddar cheese<br />

Press the crescent roll dough on the bottom and up the sides of an 8 x 8 baking dish. Brown the sausage in a skillet, drain off fat. Crumble evenly over the dough. Whisk the eggs, salt, and pepper together. Pour eggs over sausage. Sprinkle cheese on top. Bake in a 350 oven for about 15-20 minutes, or until eggs are set. Cut into squares and enjoy!<br />

I found this recipe on Pinterest and made it several weeks ago. Everyone in the family loved them. My intention was to make the recipe (16 pockets) and freeze them. Then I was planning to stretch them out for school breakfasts over several weeks. However, my plan failed. I didn't take into account the fact that Chad and I would enjoy them so much. Nor did I realize the kids would enjoy them as much as they did. They normally aren't fans of anything containing scrambled eggs. We all ate two of them the morning I made them. I froze the rest of them and they were all gone within three days. So much for planning. These are a little time consuming, but very yummy. Maybe next time I'll double the recipe to make more. The bread is heavenly. It reminds me of those sweet yeast rolls you get at Logan's or Texas Roadhouse.</div>

While this recipe isn't a true piccata, it sure is delicious!</div><div><br /></div><i>Chicken</i><br />Juice of 1 lemon (3Tbsp)<br />3 Tbsp olive oil<br />1 Tbsp minced garlic<br />1 tsp salt<br />1/4 tsp black pepper<br />1/2 tsp basil or oregano<br />2 boneless, skinless chicken breasts<br /><br /><em>Pasta</em><br />1 lb. box of dried penne pasta<br />2 Tbsp butter<br />Juice of 2 lemons (6 Tbsp)<br />1 Tbsp minced garlic<br />1/2 cup half and half (or heavy cream)<br />2 tsp dried basil<br />2 Tbps capers<br />1/2 cup grated parmesan cheese<br /><br />For the chicken, combine the first 6 ingredients and mix well. Place chicken in a ziplock bag and pour marinade over chicken. Marinate overnight in the refrigerator. When ready, grill until done. Allow chicken to rest for a few minutes and then slice into strips to serve over pasta.<br /><br /><i></i>While the chicken is grilling, cook pasta according to directions (10-12 minutes). Reserve 1/2 cup of pasta water and drain. In same sauce pan, melt butter over medium heat. Whisk in garlic and lemon juice. Pour in half and half and whisk until hot. Add some salt and pepper to taste. Add the parmesan cheese, basil and capers, and heat until cheese is melted. Check the consistency of the sauce and add some of the reserved pasta water to loosen the sauce if necessary. Toss in desired amount of pasta. It's AMAZING!<br /><br />2 sticks Butter <br />2 cups Sugar <br />1-½ cup Self-Rising Flour <br />4 whole Eggs <br />1 teaspoon Vanilla <br />2 cups Chopped Pecans <br />1-16 Oz. Package Whipped Topping <br />1-14 Oz. Can Sweetened Condensed Milk <br />8 ounces of cream cheese <br /><br />Cream butter and sugar; add flour, eggs, vanilla, and pecans. Stir by hand until well combined. When it's all combined, you might be a little confused because it doesn't really look like cake batter. And you'll double check the recipe because you think you missed an ingredient. But don't worry, you didn't. It will be okay! Spread the batter into a greased, glass 9 x 13 dish and bake 30-40 minutes at 350 degrees.<br /><br />While the cake is cooling, mix together whipped topping, sweetened condensed milk, and cream cheese until combined. Crumble cake. Layer half of the cake crumbs, followed by half of the frosting mixture. Repeat.
